Badam Thandai Recipe

When it comes to the word Thandai the festival of colors Holi comes along. It is a very popular beverage that is prepared during the Holi festival.

It is a soothing summer badam drink that can be prepared easily at home.

Ingredients:

5 cups milk, boiled and reduced to 3½ cups
1½ cup milk
2 inch stick Cinnamon (Dalchinni)
6-8 Green Cardamoms (Hari Elaichi)
1/2 tablespoon Black peppercorns (Kali Mirch)
12-15 fresh Rose Petals
A few strands of Saffron (Kesar)
3 tablespoons Melon seeds (Magaz)
10-12 Chopped Cashewnuts (Kaaju)
2 tablespoons Sugar
8 tablespoons Khus Syrup
6-8 finely Chopped Almonds (Badam)
6-8 finely Chopped Pistachios (Pista)
4 tablespoons Rose Syrup

1. In a Non Stick Pan dry roast Dalchinni, Hari Elaichi, Kali Mirch and Rose Petals. Turn off the heat, add Kesar and saute lightly.
2. In a mixing jar transfer the above mixture, add Magaz, Kaaju, Sugar and 1 cup milk. Prepare a fine paste.
3. Add this mixture into a bowl containing thickened milk and ½ cup milk. Mix well.
4. Before serving, pour 2 tbsps khus syrup into each of 5 serving glasses. Pour the prepared milk mixture.
5. Garnish glass with Badam and Pista. Drizzle 1 tbsp Rose Syrup along the rim of each glass. Serve chilled.

Badam and Pista adds extra flavor to Thandai.
